Layer cakes

Who doesn't fancy baking a layer cake? Well, it may look simple but it needs patience to walk through baking it and my first attempt baking Cocoa Mocha Layer Cake, recipe from sis Rima was a big success so yay to me :)

Being over excited with the first success and thinking i can pull it thru wit any layer cakes, i tried the Lapis Blueberry Cheese from BR. It wasn't my kinda liking layer cake but my aunt loved it.

So there it goes the fever of continuing to try new layer cakes recipe..my aunt's bday was last weekend and I knew a layer cake wud be the perfect gift for her. So I gave it a shot on the LAPIS LEGIT recipe bookmarked from sis Rima couple of months ago.

Happy Birthday Aunty Yaso & Goli :D Hope you both enjoyed it!!

Here you go for the recipe of this yummiee LAPIS LEGIT.....

Ingredients
(A)
250g SCS butter
80g sweetened condensed milk
1 tsp mixed spices
1/2 tsp powered vanilli
80g golden syrup

(B)
15 egg yolks (type A)
3 egg whites
120g caster sugar
80 hong kong flour
1 tbsp ovallete
20ml cold water

(C)
2-3 drops of yellow colouring
Some prunes, cut into chunks
Melted butter to spread

Method
Grease a 8 x 8 cake tin and line parchment paper on base.
Whisk (A) at high speed for 5-7mins until fluffy and well mixed and keep it aside.
In another clean bowl, whish (B) at medium speed for 10mins till fluffy.
Combine mixture A and B, mix it well and add the yellow colouring. Stir till smooth.
Preheat the oven to 180C.
Weigh your batter to ~ 70g for each layer and bake it using the upper grill for 5mins.
Continue the same till d last layer and bake the last layer using upper and lower fire for 10mins.
Cool cake and then you go, yummie lapis legit :)

Note:
1. Oven temp purely depends on ur oven type so adjust accordingly. Eg, recipe says 180C bt for mine i used 150C only.
2. The moment u see a golden layer, stop there so each layer bakin time also depends on your oven.
Guess I got about 10 layers ++ from this recipe.

Cheers!!
